Hui joined CCUR as pilot plant manager in December 2008. He has six years of food industry experience and one year of postdoctoral research experience in academia. Hui's primary job responsibilities are:

• assist faculty, graduate students, postdoctoral research associates, and other research staff members across campus with pilot-scale research projects;
• provide pilot-scale processing and technical consulting services for industrial clients;
• assist with pilot laboratory teaching and student research and development activities;
• manage scheduling and billing for pilot plant projects, maintain the pilot plant equipment, and troubleshoot mechanical and processing issues; and
• pursue external funding for the center and conduct basic research on the value-added processing of agricultural commodities, especially those produced in the Midwest.
