Description: 

The Baking Dough Moulder and Sheeting Roller produced by National Manufacturing Company uses two Teflon-coated steel rollers to “sheet” sample dough into flat pieces of uniform thickness.  This rugged bench- top instrument reproduces, on a small scale, the dough sheeting action that occurs in large-scale commercial dough production.  The sheeting process will provide a finished dough with a smaller and more uniformly distributed gas-cell structure.  The results obtained from National’s Sheeting Roller are both consistent and reproducible.  It removes the variability in results caused by using different operators having dissimilar manual techniques.  The Sheeter “works” the dough in the same way and for the same length of time on each sample run.  It is both simple and efficient.  The Moulder uses three rollers (two fixed-position and one adjustable-compression roller) to roll and seal individual dough pieces into their final loaf shape.  The “curled” dough is sealed and extended in length along the axial dimension by being forced between the two bottom rotating rollers and the gradually descending top compression roller.  The moulding operation promotes a smooth and relatively non-stick surface that can be easily handled.  Moulding also improves the grain and texture of the finished product.
