The Proofing & Fermentation Cabinet offers temperature and humidity control suitable for laboratory proofing of bread dough. The unit is equipped with an adjustable humidity controller (humidistat) that allows for the regulation of relative humidity between 20% and 80%. A thermostat-type heat control provides an adjustable temperature range up to 150°F (66°C). A unique, 8-door design spaced over four levels, minimizes the large outflows of internal conditioned air common with most one or two-door environmental cabinet designs. Internal, adjustable louvers at each working level permits individual air-flow regulation at each level. The transparent glass doors allow for easy visual inspection of internal contents without opening the door. The top 2-door level is reserved for heating elements, the humidity generator, and the air circulation fan. The lower three levels (6-doors) are the normal proofing areas of the cabinet. The unit has a welded-steel frame, completely insulated, with stainless-steel interior and exterior surfaces for lasting durability. A moisture drain tube is supplied on the bottom of the cabinet to provide for easy removal of unwanted condensation.
